Celebration cake and more! ‘Sweet’ treats for the birthday boy

Weeks before his birthday, the kiddo had already planned the treats he wanted. These included rainbow cakes, cupcakes with rainbow frosting, croissant with different fillings, cookies and cream ice cream, pizza, and Chinese food. My kitchen, however, could accommodate only some of his requests. Good thing, there’s takeout order option.

As I mentioned in my previous blog, I baked a practice chocolate drip cake with cream cheese frosting prior to the kiddo’s actual birthday. He’s so appreciative as always despite the many imperfections in the resulting cake.

Another pre-birthday treat was the croissant. He’s been requesting for it for quite a while already with the note that I watch how his favorite chef makes it. I actually had hesitations baking croissant because the preparation itself is time-consuming yet I gave in to his request. The dough didn’t turn out as soft and flaky as intended and the sizes weren’t uniform but the baked bread looked tolerable for a first-timer’s output. I went away for a while to chat with a friend and, when I came back, the kiddo already tried all the croissant flavors.

Then it’s time for the actual birthday cake! I even took a leave from work to devote time for baking his chocolate drip cake with buttercream frosting. As I hadn’t tried mixing colors for frosting and decorating using pipes and tips isn’t something I mastered yet, I just opted to decorate the cake with marshmallows and assorted color chocolate chips. It turned out a lot better than the practice cake in many ways, including texture, taste, and even looks.

As the birthday celebrant was also requesting for cupcakes with rainbow color frosting, I used the leftover cake frosting and tried to mix colors for the first time. The resulting frosting were pale for rainbow colors so I had to use marshmallows and assorted color chocolate chips to add colors and match the birthday cake theme. Almond flour is a healthier option for cupcakes, but I am not sure about the taste as I find it rough on the palate.

The pizza treat was bacon and mushroom flavor which is a regular in our kitchen. As I have baked this type of pizza a lot of times already, the process is already a breeze.

A week after the kiddo’s actual birthday, he was treated to a staycation for the long weekend. He also received a complimentary chocolate mouse cake from the hotel. He liked it a lot and told me to bake a similar cake when we get back home. This kid must really be my number one fan! 😀

He was overjoyed that he excitedly shared the experience in class the day that followed. 😀

Happy birthday, kiddo! It’s a little short of a month-long celebration in my kitchen. I got tired but my heart was full. Remember that you are loved!
